INGREDIENTS<br /><br />-4 Eggs<br /><br /><br />-A handful of corn tortilla chips<br /><br />-1/3 cup salsa<br /><br />-1/3 cup cheese<br /><br />-1 Jalapeno<br /><br />-1/2 onion<br /><br />-2 Tbsp butter <br /><br />-Tortillas for serving<br /><br />-Salsa verde for finishing <br /><br />METHOD<br /><br />-Whisk eggs into bowl, then break up a handful of tortilla chips into beaten eggs<br /><br />-Stir in 1/3 cup of salsa into egg chip mixture<br /><br />-Finely chop onion and jalapeno<br /><br />-Sautee in pan on med-high w/ butter until veggies soften and brown slightly<br /><br />-Reduce heat to low and add 1 tbsp butter<br /><br />-Pour in egg mixture and stir continuously until scrambled ( eggs should be gooey, they should not break apart into individual clumps, if that happens you have over scrambled.)<br /><br />-Fold in cheese and remove pan from heat<br /><br />-Spoon eggs into warm tortillas <br /><br />-Top with salsa verde
